A café with a difference I’m Christine and I run a café called Pineapple Kitchen in Brisbane, Australia. The café is a little unusual, because you don’t have to pay for the food! That’s because Pineapple Kitchen is a Pay As You Feel café. Pay As You Feel cafés try to do something about the problem of food waste. Food waste is an issue in many countries around the world. In Australia, for example, we waste about 5.3 billion kilograms of food every year. The average family throws away almost 20% of the food they buy – in a year, that’s between $1,000 and $3,800 per family! People don’t check the refrigerator before they go shopping, so they buy more than they need. Supermarkets and big businesses are also part of the problem. 20–40% of the fruit and vegetables we grow never reach the stores, because they don’t look “nice” enough – supermarkets believe that customers won’t buy them because they aren’t perfect. Supermarkets also throw away food because it has passed its “use by” or “best before” dates. Although these dates are important, they create a lot of food waste every year. Here at Pineapple Kitchen, we believe that the restaurants, stores, and supermarkets in our country waste too much food – food that is still good enough to eat. We receive ingredients from these businesses and we turn them into delicious, healthy meals. We check all of the food we receive very carefully – we look at it, smell it, and taste it. All four of my chefs have a lot of experience, so they know what to look for. If the food isn’t suitable for humans, we recycle it. Companies can use this recycled food to produce energy and electricity! This sometimes means that we use food that is past its “use by” date in our dishes. That’s why we aren’t allowed to sell the food we make. Instead, we ask people to “pay as they feel” – to pay what they want to. That means that some of our customers don’t pay anything for their food. However, most people choose to give us something for their meal. It’s usually about eight dollars, but some people pay a lot more. I know that our food is perfectly safe and I know it tastes good too! In fact, the café has been so successful that we’re opening another one in Melbourne next month!
