Carfosel® 950 Following market needs and customer’s feed back, Prayon has been working over the last months on the development of a new highly soluble phosphate specialty aiming to bring new performances to the meat and seafood industry. As a result, we present Carfosel® 950 as an unique Prayon blend dedicated for your products. Carfosel® 950 is a mix of sodium and potassium salts designed for the development of any injected/marinated meat or fish products. Main properties of Carfosel® 950 :

1. A VERY HIGH DISSOLUTION SPEED

Under standard dissolution conditions Carfosel® 950 is dissolved in about 5 seconds. This is less than half the time needed for a STPP Granular product (12 seconds) and much better than the powder STPP (about 40 seconds). This is highlighted in the attached chart. Solubilisation curve 70 60 50

Carfosel® 950 2. A VERY HIGH SOLUBILITY

Up to 70 g of Carfosel® 950 can be dissolved in 100 ml distilled water at 20°C without noticing any saturation problem. In the case of concentrated brine the total solubility of Carfosel® 950 remains around 40 g even at low temperature (4°C). As a comparison, the total solubility of STPP is around 14 g in distilled water and this figure decreases to less than 1 g when salted brine is involved.

3. A HIGH pH: the pH of Carfosel® 950 is about

9.9 - 10.1 which is the optimal pH for water binding. As a consequence the water retention capability of the meat is enhanced.

4. CARFOSEL® 950 does contain a majority of

tripolyphosphates (E451) but also a large amount of diphosphates (E450) which ensure an optimal extraction of salt-soluble proteins and hence an optimal ham texture and a very good sliceability.

5. CARFOSEL® 950 contains a certain amount of potassium and this turns the product into an ideal ingredient for promoting sodium reduction. In short, Carfosel® 950 should be an ideal product to bring new possibilities of development.
