LIST OF EMULSIFIERS (E471 AND E472) Name of emulsifier

Description

Food contain emulsifier

E471 (glyceryl monostearate)

- Manufactured from glycerin (E422) and fatty acids - Obtained from hydrogenated soy bean oil and may be genetically modified Used where the foaming power of egg protein needs to be retained in the presence of fat - In baked goods as an 'anti-staling' agent (prevents the loss of water from starches)

- Cakes - Hot-chocolate mix, - Shaped crisps - quick custard mix - Packet dessert topping - Dehydrated potato, - Sponge puddings, - Low-calorie cream - Margarine and low fat spreads - Ice cream.

Status - Depends - Mushbooh, Halal if it is from plant fat, Haram if it is from pork fat

LIST OF EMULSIFIERS (E471 AND E472) E472a (acetic esters of fatty acids)

- Prepared from mixing esters of glycerol (E422) with edible fats and acetic acid (E260). - Improves aeration properties of high fat recipes - Produces stable foam in whipped products by collecting together the fat globules.

- Coating for meat products - Nuts and fruits - Bread - Dessert toppings - Cheese cake

- Depends - Mushbooh, Halal if it is from plant fat, Haram if it is from pork fat

E472b (lactic esters of fatty acids)

- Esters of mono and diglycerides - Used to give stability and the required viscosity. - The first use for making margarine where it emulsifies the water phase in oil and fat phase.

- Low calorie spreads - Peanut butter - Ice cream - Macaroni - Noodles - Potato products - Bakery products - Whipped toppings

- Depends - Mushbooh, Halal if it is from plant fat, Haram if it is from pork fat

E472c (citric esters of fatty acids)

- Citrated mono and diglycerides - Formed by etherifying the hydroxyl groups of mono and diglycerides - A substitute for lecithin (E322) in various applications

- Infant formula and follow-on milk and other foods for infants and young children

- Depends - Mushbooh, Halal if it is from plant fat, Haram if it is from pork fat

E472d (tartaric esters of fatty acids)

E472e (acetyltartaric esters of fatty acids)

- Consists of mixed glycerol esters of mono and diacetyltartaric acid Fatty acids of food fats prepared from esters of glycerol (E422) and tartaric acid (E334). - It is made by the interaction of diacetyltartaric anhydride and mono and diglycerides.

- Bread - Hot chocolate mix - Gravy granules - Frozen pizza.

CASES RELATED TO THE EMULSIFIER (E471, E472A, E472B, E472C, E472D, AND E472E) Case 1 Wall’s Ice Cream in Malaysia is Halal • In Malaysia, the sources Wall’s ice cream is from Indonesia, Thailand and China. From the code itself, it should not be concluded that E471 is a non-halal ingredient without looking at the origin. • Wall’s Mini Poppers has received halal certification from the China Islamic Association (CIA), which is a JAKIMaccredited Islamic body.
