(The cottage cheese can also be pressed through a sieve for smoothness.)

Stir the mixture until it's combined. For a light-textured cheesecake, beat the mixture for 5 to 10 minutes on high speed with an electric mixer. Pour the cheese mixture into the prepared crust and bake 350° for 45 to 60 minutes. Turn off the heat and let the cheeseat cake cool in the oven with the door ajar for about an hour. Remove it from the oven and let it cool to room temperature before chilling it. Chill the cheesecake for at least 6 hours before it's

served.
